Hello to all that have been smoking meat/fish/poultry. I lived in Southern California for many years and thought I was BBQing. That is until I moved to Texas and realized there has to be smoke involved or it's called grilling. I'm looking to purchase my first smoker and leaning toward the WSM. I'm getting the parts together for a mini so we can take it with us when we RV but I want to be able to do ribs, brisket, (pulled) pork, fish, chicken and turkey and have that great smoke flavor plus share it with family and friends.
