For Easter! have smoked a few things and posted here and never have done a ham yet and am looking for a simple method to smoking a ham big enough for 10-12 people that is not to complicated to do. sure would appreciate some advice and recipe ideals. Thank You!

You would reheat the ham in the smoker, either partially cooked ham or fully cooked ham, to an internal of 150°+.  A partially cooked ham figure 30-35 min per pound; a fully cooked ham 15-20  min per pound @ 275°.   Remove the skin, if any, on it and score the fat crisscross. Baste with your favorite ham glaze.  When you get within 10°, then add pineapple rings dotted with cherries if you like.  You can pull it when it gets above 146°, fully cooked stage.

Simple ham glaze:

1 cup clear Karo syrup

¼ cup drained crushed pineapple

clove oil, a few drops

whole cloves

red food coloring, by the drop

coarse ground pepper, from peppermill

Mix all together, adding clove oil until sufficient flavor is reached and red food drops until sufficient color is reached; chill, then baste on ham.

You could also call a few local butchers/meat markets and get an uncooked one.  Many of them will even cure it for you so you don't have to fool with it.  As a side note, I find it very odd that no one seems to mind reheating precooked hams but I've never heard of anyone "double smoking" a precooked turkey.

Double Smoking a Turkey would produce a pile of shoe leather with wings.

Hahaha bearcarver, you are probably right but you get what I'm sayin' though right?
I knew what you meant, but I was buying "Double Smoked" Hams for about 20 years, before I got my own smoker. Now I do my own. There is no Ham as good as a Double Smoked Ham.

I'll guarantee a double smoked turkey would be real tough, maybe even hard or brittle.

Mrs Bear is picking up our Double Smoked Ham for tomorrow, right now, at the Quakertown Farmers' Market.

I have to buy one this year, because of my health keeping me from the smoker. They aren't cheap!!!

I did 3 hams for Easter and have done several over the past few years. I use a Honey cured spiral ham. Rinse it off, pat dry, coat with honey then dark brown sugar. Smoke face brown for about 3hours at 250. Wrap in foil fro about 30 minutes (which how it takes me to get to in-laws). Rave reviews!! Oh...I use hickory or apple wood.

I've been doing Double Smoked Hams for awhile now (See Below), similar to the way you say, but I never used Apple Juice to get a Pineapple flavor. I use Pineapple to get Pineapple flavor. If I wanted Apple flavor I would use Apple juice.

Maybe I should try Apple pellets to get the Hickory smoke flavor I crave so much???
