Will do a post showing a process for making carne seca (marinated, smoked/cooked, dried beef) but wanted to share a simple way I use it.
Equal portions (I used about 1/2 cup of each):
Tomato, onion, bell pepper -- chopped
Carne seca -- rough chopped into bite size
1 tsp chili powder
A dash of cumin
3 eggs
1 tbs cooking oil
Prepped.
Eggs mixed with carne seca and chili powder, beaten and set to soak for 10-15 minutes.
While egg/meat sets, oil goes in pan over medium heat with onions and peppers to sauté until onions are translucent/starting to brown.
Sauté is done, right before the eggs go in, I drop in a knob of butter.
Soft corn tortillas out and heat briefly in the oven or microwave.
Eggs/meat added to the pan and scrambled to your preferred level of done-ness. Tomatoes are added here also.
Plated with tortillas and hot sauce.
Brunch is served!
