I have an old Brinkman upright charcoal smoker. I have never been able to keep the heat regulated. These smokers have no bottom in them. After reading on this forum and learning more about smoking, I have noticed that the upright smokers have a sealed bottom and use ball valves to control the intake. I am going to close the bottom and seal it and add pipe nipples and valves. I am also going to seal the side access door and permanently close it off. I want to use it like an ugly drum smoker and see if that will work. Has anyone else tried this and do you think it will work better?
