It's my birthday!! And I'm smokin, or about to start smoking a big ole' butt!! I wanted to get it on around 5am, but it's been pouring cats & dogs since midnight and it's a whopping 37 degrees :(

Hubby just got up and set a tent over the smoker, so here we go!!! I ended up with another oddly shaped, de-boned butt from Costco, but whatever, the last one turned out ok!! Stay posted :)

Thinkin about makin a few smoked "scotch eggs" for snacks and I picked up some beautiful Jalapanos and a nice 3lb block of an aged chedder for some ABT's.

I also bought a pineapple. Hmmm what to do with it? Any ideas?

Started with too much smoke, now I have none :( basically just cooking in a box at a real low temp... Suggestions? I've got coals (hickory and applewood...

Had the same thing happen to me once... Just add small amount of chips or chunks. If you didn't soak them wrap some chunks in foil and you'll be good to go.

Thank you for the idea, had a huge piece of applewood that kept bursting into flames; I pulled it out and wrapped it up. Today is just not going as planned. HUGE temp spikes, flames, too much smoke, no smoke... I'm just gunna leave it be for a bit--as long as it doesn't spike to a zillion degrees again...

Maybe time to curl up with a book and nap... Been the worst smoking two hours ever! But I'm not bummed... I'm still working on getting good :)

Sometimes that is all you can do. Happy birthday. Looks like a cruddy day in NC, same kind of weather as we are getting in Ohio. Good luck today!

Happy B-day!! Sometimes the more you mess with it the worse things get. I'd leave it alone for a bit and let it settle in, then do some adjustments if necessary. As long as you don't have any huge spikes or drops you'll be fine for a few.

    Gotta love cold, rainy, windy days when you wanna smoke something.  About that pineapple, there is SO much you can do with it.  You could juice it and mix it with some rum and use it to spray the butt, or slice it and place the pieces on top of the butt (held in place with a toothpick), make a pineapple upside down bday cake!!!  Whatever you decide, hope you have an incredible day and even better smoke!!!
