Problems making summer sausage

Wondering if I can get your input on my technique.  Had a day of making sausage that seemed to go worse as I went along.

First off is my new grinder.  For grinding meat its great.  Makes quick work of anything I have thrown at it.  

For stuffing sausages though, it seems way too slow.  I assembled it as per the directions (checked that twice).

I thought I could get away with using my grinder as a stuffer, but is it common to have issues/such slow going?

I hated it when I had to use a grinder to stuff with. I spent 100 bucks and got the 5lb stuffer from Northern Tool and it makes a whole different deal to sausage making...
 
You want to buy a designated stuffer, used my grinder one time to stuff with wife helping me.................... and I was about single by time we were done.

Yep, agree with all above. Stuffed once using my grinder/stuffer attachment on the Kitchen Aid and that was enuf. Look around on line for deals that pop up. Amazon has decent prices on the Lem model, there's also the Grizzly 5# stuffer for less than a 100 usually. Will make a big difference not only in attitude but finished product.
 
When I first became interested in making sausage I read a similar post and didn't even try to use my grinder to stuff with. Went straight to the 5# Lem. No regrets and my wife still loves me!
 
The only way that I was able to use my stuffing attachment on the mixer was to have the meat very cold and very wet. My son made me a nylon spacer that replaced the grinder plate. It was great for small 5lb batches. I too have made the switch to a dedicated grinder and stuffer. It's a little pricey but well worth the investment for proper equipment.  The KitchenAids still have their place in the kitchen but not in sausage making.

Same here.   I'm waiting for it to arrive with stuffing supplies.    Can't figure out what I want to make first.   Not sure about the wife.   She's still looking at me like I'm friking nuts.   She'll get over it.....in time  :-)
 
I have a Cabelas Pro Series grinder and have had no issues with it.  When I'm ready to stuff casings, not only do I use the stuffing plate it came with, but I remove the cutting blade.  This way, the auger pushes the meat right though, with out the resistance of the cutting blade.

Seems like common sense, but hey...I'm fairly new at this too and never knew that before.

Looked that up on Amazon today and its about $99.00. Is that the one that you have Roller?
