Doing some sheep LJ with some pork

PLEASE FOLLOW BASIC DRY CURING.

Using a LJ pre mix. (im lazy)


Cure 2


Using sheep casings. My LJ press is for hog casings. Soak time is 3 hours with frequent cold water changes.


Got them stuffed and poked.


Weigh each set of LJ links, tag with day/date and green weight. I also number each set. Write all the info down.



Hanging for a few, going to hit them with some smoke.


Being smaller these will get done faster than the ones i do in hog casings.

Yeah i didnt care for theirs either. This pack is from PSSeasonings who also makes all the Cabelas smokhouse kits.

Looks good so far I have not received any bad seasonings for PS I really like them and their service can't wait to see final product.

When I was staioned in Germany we would get LJ(s) and take on flights with a brotchen.  Man...I miss those days.  Thanks for the memory -- this looks great.  Did you hang in an RV closet?

Yeah my wife was in Germany too, she remembers eating these.

Yeah the RV closet is great, Holds pretty decent temps being on an outter wall.

Sheep casings should knock some dry time down allot. Going to weigh again tomorrow.

You can see the weight id going down, which is good. Cant find my ph strips so i just winging it here.


My dry fridge space (for now) The blue cube below the LJ is a fridge fan.


Sux not having my dedicated fridge here.
 
This is the 3rd weighing of the LJ. Sorry for such dark pics.
 


Smell is really good, texture is getting firm. No mold of any kind. Temp in the RV is ranging from 67-72. R/H is steady at 66%


They are loosing lots of weight. Going to Florida for couple days and these should be ready when i get back.
