How are your guys?  I have to admit I have been cheating.  I have been coming here for months and just now decided to sign up.  I am a very good cook and for a long time a decent barbecuer.  Maybe a year or so I started taking my craft a lot more seriously and now I am at the point where I want to put my big boy pants on.

I am cooking with a Old Country Pecos Smoker as my primary and a Weber Smoky Mountain as backup.  I have a Chargriller Pro for grilling.

I am stepping up from a Char-Broil Silver Smoker Offset at least a year ago I stepped up.

Looking to do some mods on my Pecos but I am also looking for a tow behind there is a local builder here in Texas I have been talking to and his rigs look great.  I have also been looking at the Lang's great price but not so sure about reverse flow.  Believe it or not I live about 5 mins from Jamie Geer of Jambo pits and BBQ pit masters first season, he invited me out to look at his pits also.  These things are the hot rods of smokers but they look to be strictly competition cookers and I am leaning more towards a need for catering.  But without a doubt Jamie Geer is one of the nicest people you could ever hope to meet.

anyway.  I love smoking (meat) Grillin and eatin.

Nice pits. I have an Old Country Wrangler smoker and a WSM myself. Just smoked my first brisket on the OC smoker and it was awesom with a great smoke ring. Welcome!!!
