First smoke (brisket) with brand new M.E.S. and potato bombs - with Q-view

Hi Folks,

I picked up a 40" Masterbuilt electric smoker from Sam's Club on Saturday morning.  I also purchased a 6 lb brisket while there.  Smoker cost $299 and paid duty at the border of $38.  Hopefully this is a good price.  Did a bunch of research online and I think it is at least reasonable.

Got the smoker all set up on Saturday and but didn't have a free 3 hour block to season it, so I seasoned it first thing Sunday prior to smoking the brisket.

Put a dry rub on the brisket on Saturday, wrapped it in plastic wrap and left it in the fridge overnight.


On Saturday I also purchased an air conditioner cover from Home Depot to protect the smoker from the rain and snow that we will have.  It was much bigger than required (34"x34"), but for $18 and a piece of twine to tie around it, it works pretty good.

Sunday brought some rain so I covered the electronic readout with a ziplock bag while I was seasoning the smoker.


Here is a picture of the brisket just before I start it up.  I ended up plugging in two probes, the one attached to the smoker and another one to check if the smoker is calibrated correctly (it is).

Since it was just over 6 lbs, I set the temp for 225F and the time for 6 hours and let it go.  I added more wood chips (hickory) about every 45 minutes and there was always a good flow of smoke.


In the meantime I started making the potato bombs that I saw on YouTube from the BBQ Pit Boys.


I wasn't too adventurous and just stuffed them with a piece of mostly cooked bacon, some marble cheddar cheese and I used a syringe of soft butter (Kerrygold from Ireland from grass fed cows - healthier!).

I then spread extra butter on their outsides and salted and peppered them and wrapped them in foil.  I cooked them on my bar-b-q using indirect heat at 400F for about an hour and a quarter.  Next time I'll time it so that I can throw them in the smoker as well.  (Had 3 empty shelves...)


Here is the brisket once it was wrapped in foil.  Just bringing it up to 190F.  Had some problems with the temperature/timing but I'll put that in another post since this one is getting quite long with the pictures...


After it came out of the smoker I let it rest for 10 minutes and then sliced it.  It sliced very easily and the bark tasty very good.

Next time I'll try stuffing more goodies into the potatoes.  We had my sister and her family, my parents and my father-in-law over for dinner and everyone loved the food.  My Mom brought two kinds of coleslaw/cabbage salad and my sister brought two different ice-creams for dessert.


Here we are on Monday morning and I'm already wondering what my next smoke will be...

Morning!  That does look like some great food!  The Potato Bombs look interesting!  I have some Kerrygold Cheese in the fridge and it is good!  I like their products.

Sounds like you had some happy campers last nite!  I am planning my next "smokes" too.  Always on your mind...once you get hooked!

After you smoke something, can you freeze it?  With 3 unused shelves it seems like a bit of a waste of smoke and heat to not load it up.  However, there is a limit to the amount a family can consume before it goes bad.

Does anyone smoke more than you need and then freeze the rest?  What products/cuts of meat would this work best for?

Rob...I do!  If you are going to fire up that bad boy...use it!  I always have some BB in the freezer for that reason.  Chickens would not be bad either...just watch where you put them on the shelves. (drippings .....don't want things to get icky on the other meats) I package the pulled pork or chicken up and freeze it.  I am a newbie too...and these are the things I have done.  Others will give you their 2 cents too.
