Hello, from Alabama i'm new to the forum, I'm not a newbie and not a pro by any means either. For the most part I've always done my smoking on a redneck style block pit with a 3x5' piece of stainless shaker screen
material that my dad got from the coal mines years ago. I just got a new offset smoker for Christmas so I thought I'd join the forum to get more familiar with temperature control with an offset and to pick up ideas for recipes and such from all you guys out there. Looks like an awesome place for info, thanks!

to SMF!  Where in Alabama are you from?  We are from Madison..right next door to Huntsville.  Would you mind updating your profile with that info?  There are a bunch of us here on the forums.

Thanks guys, yes KathrynN I signed up for the ecourse and online news letter. I am from Jasper Alabama but I get all around the central to north part of the state with my other hobby. (fishing)
