Girlfriend and I had a wonderful Smoked Turkey dinner that her sister put on for Christmas, most everyday since then she has been hankerin' for smoked chicken. I have to admit my first couple tries did not turn out well. Found an interesting recipe over at AllRecipies for
[h1]BBQ Bill's Citrus Smoked Chicken, it's overnight marinated in basic spices and lemon-lime soda, I used my fave, 7-UP. It's just about freezing here and my FCS will have a hard time making much over 150 degrees, so my plans are to smoke about 5 hours then finish in house oven. Will post more later. [/h1]

Overnight bird bath in 2 liters of 7-UP and seasoning salt


Most of the seasonings washed off, added more pepper & seasoning salt (Memphis style BBQ from Dollar store)


Homemade pellet smoker for the flavor, tabletop propane grill in bottom for heat.

Chicken quarters are one of my favorites to smoke, looks great Jetman!!!! Can you change out your regulator so you have better control of the temps, or is your burner not capable of higher temps. ON my GOSM I took the regulator from my turkey fryer to use as a needle valve so I can drop down to about 120* and up to 600*.  Of course the burner is okay with the higher temps. I typically do my chickens anywhere from 275*-325*.  I'd like to have a couple of those steamer pans!
 
That chicken looks delicious! One question - where did you get the pan that looks like a roasting pan with holes in it? I went out today and looked all over for one like it and came up empty handed. People had no idea what I wanted when I asked for a "roasting pan with holes in it".

Look at Restaurant Supply Stores locally or online. They are called Perforated Steam Table or Hotel Pans. They are designed to be used in Steam Tables to cook and/or keep Vegetables hot. They come in a variety of sizes and depths...JJ

Those are steamer trays, find a restaurant supply store in your area, and they should have them.

I'm using full size stainless steel perforated steam table pans, available most any restaurant supply. Found mine at a local scrap yard where they re-sell the good stuff, paid about $6 each. Did a quick Google search and found some for $13 each here:

I do have a regulator on the smoker, problem is the burner is just too small for all the space I need to heat in the FCS (file cabinet smoker). It's also single wall so I'm wasting a ton of heat. Have some ideas to build a new smoker, one with much better insulation and better heat control. Get me an old, small-ish dead water heater and a small trailer axle, then I'll add some of the stainless I have in the scrap pile and a trailer hitch
