My wife's family typically has Christmas dinner at my brother-in-law's house. This year was our first Christmas married, so we decided the party would be at our place. My brother-in-law also has an offset smoker which he uses on occasion. So, I decided to take all of the knowledge I've gained here and do something exciting. What else but smoked prime rib?

I started with a rib roast on the prior Monday. I coated it with Montreal steak seasoning, wrapped it in cheesecloth, and put it in the fridge to dry age. I changed the cheesecloth once along the way, but it was protected well in a controlled temperature drawer. Christmas morning, it's a cup of coffee, some presents, and TBS.

I pulled it at 110 and threw it onto a broiling pan to bake in the oven an additional 10 minutes to put a nice crust on it.


Sliced after resting for about 30 mins. In hindsight, I should have waited longer, but everyone was dying to get some.
