The other day I was in Costco's and saw some Top Round Steaks on sale. I bought a package of two steaks, one 3 pounds and one about 2 pounds. I made a simple rub with salt, pepper, garlic, and chipolte pepper and rubbed them.
I pre-heated the smoker to about 225 and put them on over pecan woods.
I smoked them for about 2 hours until they hit 135, then pulled, wrapped, and put them in an ice chest until they peaked about 140, then started back down.
While they were resting, I made an onion sauce with onions, butter, and some bourbon. When the steaks started back down, I threw them on a searing burner as hot as I could get it for about 2-3 minutes per side.
I sliced them thin and served them with Beef Rice-a-Roni (yeah, I know, not exciting) and a salad but it was good.
Since there were plenty of left overs, we made fajitas with the left overs, not sure which I liked better. They all came out great and my wife and son were really happy both the first night and a couple days later (with Margaritas!)
