Has anybody stood up a bird? Like on a beer can chicken stand. I'm thinking that would crisp the skin all the way around. I slaughterhouse brined my 12 lb bird last night and will put it on my traeger in a shallow pan at 11am on smoke for an hour then turn it up to 250 til done and I'm going to see if it will stand up. Any suggestions welcome.

Kenny, morning.... I you have somewhere to hang it in your smoker, I have hung the bird by the leg binding thing that comes in them.... Then the bird hangs breast down...  worked very well...  Twist the wings backward so they don't flop around and tie the legs together....

I have a welder and a little time. I'll see if I can rig something up. Thanks. What about starting it at the smoke setting which is 180? Will it be in the unsafe zone too long? Or is it even necessary?

Do a search for a turkey cannon.  I believe that gives the effect of a beer can chicken but for a large bird and better aligned.
