I actually created an account quite awhile ago to see some pics, etc that were posted, but this will be my first post.
Texas guy here, from the McKinney/Frisco area north of Dallas. I've been cooking for quite awhile, do some small catering, and I compete as well.
I have two Primo Oval XLs, two Weber 26.75" kettles (one of them is a Smoke-EZ conversion that just rocks), and a Weber 22.5" that I've converted into a Cajun Bandit (I have both the Cajun Bandit conversion and the Stacker) that is equally awesome. To keep from transporting the ceramics (hands-down my favorite grills ever) a bunch is the prime driver for why I have so many kettle smokers. I also had a 22.5" Weber Smokey Mountain that I sold because I like the conversions better and can maintain more stable temps for longer. PLUS, undress 'em and they're back to being the best non-ceramic grills on the planet :)
Anyways, thanks much for the great site! Lots of good information here. Looking forward to getting to know some of you and engage in some of the great discussions.
