Sausage

Partly pan fried hash browns

Scrambled Eggs

Sauteed Spanish onion, red, green and orange bell peppers 

Shredded mixed cheese

Salt, Black pepper and Hungarian paprika

Bacon

As stated in the "Scarbelly Memorial Smokeout" I was going to participate in thought only do to an upcoming medical test. But decided to smoke a fatty in his honor anyway. I did post this in that thread but didn't want to bitch about my problems, so :))) I'll do it here. Went to the store and purchased the needed items. Decided that I was going to layer all the items the same way as the sausage is rolled out in a 1gal Ziploc bag. Thinking that if I keep everything thin enough I shouldn't have any problems rolling up the fatty. WRONG! Not sure what happened to some of the pics that I took in the process, but they're not on my phone. Anyhow, to make a long story short, it turned into a BIG mess. There was no way I was going to roll this thing....now what? Cut it in half and stack them on top of each other....done. Try to roll now.....WRONG!! Into the freezer to firm up and try again....wrong again! This thing is way too big....now what?!? I cut a peace off each end of the fatty mess, so it will be as wide as a1gal Ziploc. Cut the remaining disaster in half again, lengthwise. Rolled out two more chubs and ended up with these two fatties. About maybe 2/3 of the way into the smoke, I glance at my remote for another temp check and see it's taking a nose-dive. :)) So I say to myself...wtf, now what? Go outside to the smoker and see that it's calling for heat but the element is not on.....GREAT! Finished them in the oven.

pick it up and was about to trash it and wife said "don't you dare"

lol....yeah, I was a LITTLE frustrated myself with the way this fatty smoke was turning out but, I was able to save it. The smoker on the other hand is no longer working. I'm guessing that either one of the wires broke off of a terminal or the heating element called it quits. Guess I'll find out because I need my smoker to work. The strange part about the whole thing is, just the day before my smoker took a dump I was reading a thread where the person was stating that he has replaced the heating element in his MES like four times in a year or so and ended buying a gas smoker. I hope I'm not going down that same road.
 
Might have been a little messy going together but the end result looks Awesome!!!
 
Did my first Fatties over the weekend also!  I had done some reading, and kept both my sausage one, and burger one to 1lb chubs, and kept the stuffing to a minimum.  I'm not a big bacon or sausage person, but the other taste testers gave them a thumb's up.  I did sauteed peppers/onions/shrooms/Provalone in the burger one, and bbq sauce/provalone in the sausage one.  I think if I smoked fatties again, I would finish them off in the broiler for a few minutes to crisp up the bacon more...  I did a dozen brats and Dutch's Wicked Baked Beans also. Dang, those brats are good smoked up..  Dutch's beans go without saying.... :)




 
Bro if you didn't tell us you had problems there would be no way to tell from those great pics. Well done...JJ

Nice job on your first fatties KCRZ!

These weren't my first fatties but it sure felt like it during the assembly phase.

Wanted to post my mistake so maybe a new member will read it, take note and hopefully avoid it. It doesn't take much to over stuff a fatty.
 
@JP61, even if you over stuff, I figured doing the "Plastic Wrap" Twirl, would sort things out! :)  I was amazed how well that chubbed the fattie up, as mine looked long and skinny before the "Twirl"

........the MES40 is up and running! As I suspected, one of the wires for the heating element overheated and burned right off the terminal. 

The weather SUCKS here in NE Ohio.......it's been raining pretty much all day and the wind is blowing like crazy. They're saying the worst is yet to come.......HOLY SHEEP $H1T Batman, that was a nasty wind gust just now. Better go eat something before the power goes out.
