This was a trying day for a simple smoke. The little lady wanted wet ribs as she has decided she prefers them to just a rub so she gets what she wants. I went out to get some fresh corn and couldn't find any at the 4 places I looked at. So conceding defeat I went with the next best option, corn that was already half shucked and cleaned. Went in to a walmart I don't really go to so I could grab some tiger sauce and beans and there was the corn I was looking for. Too late to change directions now so I went home kicking myself. Went ahead and trimmed the spares and seasoned them with salt an pepper and tossed it all on the smoker. Was doing a modified 3-2-1. Went with 2-2-.5 in the smoker and finished on the grill with sauce. Foiled with a little apple juice and yuengling black and tan. Riblets and skirt were foiled with tiger sauce, apple juice, and more black and tan. Baked beans were a mix of bush's grilling beans bourbon and brown sugar, jim bean, garlic, onions, jalapenos, bell pepper, the skirt meat, 5 drops of Universe hottest sauce ver. 2 from pepper palace, and topped with bacon. Corn was foiled with butter, chili powder, and garlic powder. Finished corn and ribs on the grill grate to mark and to glaze the sauce.

Overall the ribs were good. A little fatty but thats just the way it is sometimes. They fell clean off the bone but had that just the right pull to it. Wife was happy with the ribs and the saucing so overall Id say it was a success.
