So, got the XL egg put together last night and just threw the meat on it for the first run. This is only my 2nd ever smoke. Trying spare ribs along with two 4.5lb butts. If you have any tips on the ribs during cooking, let me know. My plan is to leave them on for 3hrs at about 230*, pull and foil with applejuice and butter, then back on for 2hrs. Remove after that and put them back on for the last hour. If I am missing something, any advice would be greatly appreciated.
