Picked these up today for a little smoking, the ribs are really cut up, the butcher was trying to make his roast really good from what I can tell. When I pulled them out of the package they almost came apart because of how close it was cut to the bone. It is almost like each rib is separate from each other with no real meat holding them together. I am still hoping that these turn out tonight. (the wife was getting tired of pork ribs almost every weekend)
