Nice cook and smoker. I never thought of putting sides in a pan with the chicken, I'll have to borrow that idea. LOL.

What size cooker is that? Looks like you can put a whole farm yard of chickens in there.
Thanks! That is a BTLE smoker made some mods to the fire box added a steel nipple for probe pass through, sealing the fire box was the key to making this smoker hold consitant temps. I've doen about thirty or so smokes on it to date with no problems.
 
What mods did you do on the firebox ; height ,coalring , venting...

Had a friend come over and weld all the seams where the fire box bolts together, on the ends there was a gap pretty small but it allowed unrestricted air flow, once that was done maintaining temps was not a problem. I paid him with a couple of butts for the welding.

 Also made a charcoal basket with expanded steel to give longer burn time when using lump charcoal.
