Just received a smoker as a gift and have never smoked anything in my life. Thought I'd start out with some chicken thighs. Will probably keep it simple and just put BBQ sauce on them, but as far as times/temps/any other tips I have no idea. Thanks in advance for the help!

Welcome to SMF! Ya might want to swing by Role Call to introduce yourself. It helps to have your location as well.

First things first. Check your thermometer and make sure it is accurate or at least know how far it is off.

A little info about the smoker should get someone who has one to help with the operation of it.

I smoke my chicken at 250-275.

It should take about 1 1/2 - 2 hrs at that temp. You want an internal temp of 165 minimum. Some go to 175 on thighs and legs.

Don't add the BBQ sauce till the last 30min. When mine gets to 155 I will glaze with my sauce if that is what I choose to do. You don't add BBQ sauce in the beginning due to the sugar content in it, so it will burn.

For seasoning you can go in many ways: store bought mix ( might be a good way to start, since new to smoking and will give one less thing to worry about), make your own, brineing ( lots of info on the forum about that) and going natural without any seasoning.

Thanks a bunch for the tips! Ya I'll have to swing by the roll call forum. Stay tuned for results!
