Texas native living in NC and looking to learn the ways of smoking

Hello everyone, my name is Mark and I'm originally from Texas but have lived in NC since 2002.  NC barbeque is just not for me and very few places here offer Texas style bbq (and those who do aren't very good at it) so I'm looking to learn about smoking so I can attempt some bbq that reminds me of home.  I'm pretty good at the grill but don't own a smoker so I'm starting from scratch.

 , and miss placed to oihO 22yrs. ago.

Your post said you need to learn how to BBQ , shame on you

 , tsch..tsch... You should have it in your blood. Oh well , your learning curve will decrease quickly here ; and you'll be tossing in your flavors from your roots.

Meantime , get a Bib , show us your equipment and shots of what you have cooked (no matter whay it may be or look like) we won't laugh(much) . Get to know us , and as always ...

I moved to NC just a couple years after high school so cooking wasn't high on my priority list.  At that time in my life my thought process was more like why cook it myself when there are all these great bbq joints around?

I know how to BBQ on paper so to speak... just have never applied it.  give me a grill and I can do great things.  smoking low and slow.... just never done it.

Welcome, MARK  (I guess that would make you an EX-TEX)??       I guess you'd say I'm a  Texican Smoker!!!!

Don't be afraid to ask questions, there is a LOT of knowledge here, and a LOT of good advice. Not to mention some Great Q-Views!!

 

SOOO....Welcome and good smoking, and ATSG... 'Smoke 'em if you got got 'em' !!!   (as the saying goes)

 

I have the Master Forge two door gas smoker, (from Lowes) and after a few mods, (leaking smoke around doors) I am very pleased with it.  Check it out, there are MANY different types to choose from.................GOOD LUCK!!!!!!!!!!!

Just ordered my smoker from Amazon.  MES 30 digital w/ window and a cover.  from what I have read on various sites the review are pretty good so i'm excited.  it will be here on Wednesday and can't wait to get started.

Hello Mark and welcome to SMF! Congrats on the new smoker purchase. I have an MES 40 and really love the ease of it, but I am looking to add a propane smoker as well.

Keep in mind that if you are looking for a smoke ring, it doesn't happen with an electric smoker, but other than that have fun and show us what you're smoking!
