First Brisket Smoke

Used a smoke for about 12 years now and have never smoked a Brisket, never really thought that much about it until I came upon this site about a year ago. Now, that's my goal and have loaded my first brisket on the GOSM this morning. I've always used a SFB for many years and just bought me the GOSM after much investigation. Starting out with a 6lb flat for my first one. Went by Walmart yesterday after work to see what they had and when I saw the size of a 13.6lb packer the pucker factor kicked in standing there. Since this is my first one I decided to start out with just a flat. I will try a packer next time. I have read so many threads on here about smoking briskets so I hope this one turns out as good as the ones I have seen on here. Rinsed it off last night and put down a thin layer of mustard and then put the dry rub on, wrapped it and put in the fridge. Set it out this morning to warm up for about 30 min. while getting smoker going and up to temp and some TBS then put it on. I will be post pics along with the progress. Sure hope all goes well.

Sitting at around 4 hours into it and just like everything I have read, IT just hangs there around 148. Started spraying a little apple cider mix I have about every hour. At 4 hours went ahead and put some small new potatoes and sweet vidalia onions and a little beef broth mix in with all the drippings and  just sit back and wait a little while. Keeping the temp around 235.

Well, took it off the GOSM at 190, wrapped it up and put it in the cooler for a couple hours. Sliced it up and it cut like butta and really tasted awesome. The family loved it.

Didn't have a real noticeable smoke ring but had a great smoke taste, very juicy.

Made a great sandwich and the potatoes and vidalias were very tasty.
