Always get great feedback from you guys, so I want to thank you in advance.  First time to smoke ribs and fatties.  Brinkman Vertical. What is the ideal temperature for each?
 
I'm sorry, let me clarify.  I'm trying to get the ideal internal temp of the meat.??
 
Oh ok, Ribs are more of a time cook than IT. It's difficult to get an accurate reading because of the bones, but if you could 

get a good reading the IT would be 195º. Most folks use the bend test or watch for the pull back from the bones.

Personally, i watch for about a 1/2" to 3/4" of pull back.

The fattie would be 165º IT if your using sausage.
