AMNS - This is a sawdust smoker basically designed to be used for cold smokes. I use mine for both cold and hot with great results but it is going to depend on where you put it in the smoker.
You can use pellets but you and only use them every other row so they don't jump across
AMNPS - This is the pellet version for hot smokes or cold smokes and can burn both pellets and dust without any issues. If you can afford it this is the unit I recommend. I use the pellets for hot smokes but when doing cheese, I don't want the heat the pellets put out so I burn dust.
Hope this helps and send me a PM if you need more answers
I use a Blazin Grill works smoker box. All SS and heavy duty! I started with a metal strainer where the center was bent up over a soup can into a bundt cake looking bowl. A $6 device to burn pellets to add smoke or cold smoke.
