Was discussing Christmas with the wife the other day and she asked what I wanted. So I just let out a little hint that I wanted an MES 40". OK hint not to little, handed her the Cabelas add that had it on sale. To my suprise she agreed and it should be here tomorrow Can't wait so I can get seasoned this weekend and then start planning my first smoke with my new toy. Just gotta love the wife.

Congrats on your new toy. Lots of great smokes can come out of that unit. I would recommend getting an AMNPS too.

MES arrived yesterday. All seasoned and ready to go. Then Mrs. Dee tells me to go buy something to smoke. So ribs in now will post q-view in the morning. Tomorrow will be my first cold smoked cheese. This is when I will be testing my AMNPS with this. As far as keeping the Mrs. well after 34 years it's kind of hard to get rid of her. Looks like many more smokes to come.
