Hi Newbie from Grand Island Ne, I have a MES 30 elect smoker, I have a post in the poultry section on hammy flavored brine, I was also wondering if there was a different cure i can use instead of the one in Pops recipe, also can turkey and chicken be brined together, Thanks Jim

Welcome to SMF lots of brine recipes listed here to many for me to list. I just put one together for a chicken I am doing today..

1 1/2 gal. water

1/2 cup salt

1/2 cup Brn sugar

garlic powder

onion powder

cajun seasoning

Louisiana Hot sauce

The last 4 ing. are to your taste

Bring brine to boil then let cool and place poultry in it and place in frig for 24 or so hours.

 

As long as you make enough brine to cover your 2 birds I would think that you can brine them together...

Welcome to SMF Jim!

 

You can substitute another cure in Pop's brine, you just need to go by the amount on the cure you use per gallon of water. Pop's recipe amounts are only for cure #1. If you use TQ you will have to go by the instructions on the TQ package as to the amount needed for 1 gallon of water.

Yes you can brine a chicken & a turkey together.

Welcome aboard, Jim!

 

Please carefully note Al's post if you are going to try substituting cures.  Also note that when using Tender Quick you are adding a lot of salt, so any other salt in the Cure #1 recipe will have to be reduced proportionately.
