Been a while since I've done a qview, chickens & butts start to look alike after a while. Be that as it may, popped for Costco ribs as a treat after a disappointing slab from the el cheapo market a few weeks back. Twenty five bucks for 9 pounds but they were nice and meaty with great flavor so I can't gripe to much. Took membrane & flap off, dry rubbed and rested overnight then did the 3-2-1 with some 50-50 Sweet Baby Rays & peach/berry Hansens mop every hour the first 3 hours, foiled with some more of the peach/berry nectar and finished the last hour with 2 more mops. Since the smoker was going threw in some fresh hocks for future bean makings as a last minute idea. First time doing hocks, look kinda good I think. One slab down.....one to go.
