10 hours and still those butts are only at 165 degrees... Tell me, when the stall is over, does the temp rise rapidly?

After reading many threads, I decided not to foil. I also cut the fat cap off one and left the other on... In the future, I think I will remove fat caps... as I like the extra bark. Like everyone says, experiment and do what you like most.
