I've had a whole chicken in my smoker for about 7 hours. I kept it at 200 degrees until about an hour ago when I read this blog. Then I moved it to 250 degrees. The internal temp is at about 155 degrees. I assumed it would be finished by now. Recommendations for how to finish cooking this bird?

High heat works well on chicken. Takes me 60-90 minutes to do a whole bird at 325-350. I'd say for yours, crank up the heat to finish it. If it won't go any higher put it in a 350 degree oven. It's got more than enough smoke by now. Because it spent so much time at a low temperature MAKE SURE you get it to 165. Technically you can eat chicken at 140 if it's held there for a certain amount of time, but Not knowing when it hit what temp you really need to be careful. I'd probably take it to 175 just to be sure.
