I've always wanted a heavy duty smoker, and i finally bought one a few months ago. I've been learning slowly how to use it and cook with it. My first smoke was a rack of baby back ribs. I forgot to cut the membrane so it was a little tough. My second smoke was a pork butt meant to be pulled pork. My internal temp was at about 180 so no pulled pork there (I misread how much the pulled pork weighed). My third smoke will be today with a beef brisket. I have been preparing since Friday and I'm excited.
I've made a few mods to my smoker (Brinkmann trailmaster limited edition). My wife thought the smoker was no good since i've been tinkering with it. I had to explain to her that making the smoker better was half the fun.
