Hi,

I'm a salesman that currently lives in Katy, TX, but I am originally from the bayou.... Houma, LA.  I am very happily, married and currently have a six year-old son and new baby on the way.  I have been lurking around on this forum for at least a year and finally decided to join.

I have an Oklahoma Joe's horizontal smoker that I have had for about 5 years and I have a custom-built natural-gas vertical smoker that I completed about 3-4 months ago, using a ton of info from this forum.  Besides smoking meat, I cook outdoors about 2-3 times during the week and every weekend.  Beyond the smokers, I have a Weber 3 burner natural gas grill and other burners/ pots to cook everything from boiled crawfish, to Jambalya, to cracklin's, and gumbo in my rustic outdoor kitchen.   I also hunt and process all of my own wild-game.

Cooking outdoors is by far my most enjoyable, and sometimes expensive, hobby and passion.   Of course, alongside every outdoor cook comes the opportunity to enjoy a premium cigar and a cold beverage.

  Good morning and welcome to the forum, from a very nice day in East Texas. Lots of great people with tons of information on just about  everything.   

Know exactly where you are, also use to do some work in Houma (Refinery)    When you go into Houston on I-10 up around Buffalo Speedway there are a couple of tower cranes my #1 son is running one of those
