Congrats. Do something easy like chicken to get a feel of your new toy.

Chicken is nice and but if you are feeling adventurous try a pulled pork very forgiving and you will feel like a king when everyone tell you how good it is. You are gonna love it makes smoking meat easy enough that you worry more about the meat than the heat.

Congrats on the new MES! Your going to love that smoker. I say for your maiden voyage go for pulled pork or chicken.[IMG]

Pork Butt is a great start but it is a long cook.
I have the 800 w. MES from sams and i don't do chicken on it .
Not that you can't smoke a great bird on it but my MES won't get much above 250 deg. and you need higher temps to get the skin from rubbery to crispy.
I have done boneless / skinless w/ a little bacon on top and it was good.
Ribs are easy on the MES .Just need to mind them a lil more than a butt. Also meatloaf is a great 1st smoke.

I have been smoking leg quarters at least once a week on my MES with the 1200 watt element and they come out great.

We coat them with olive oil and then my rub and smoke them at 280º for about 2 hrs until the hit at least 170º. The last ones we did we almost forgot to check them [IMG] and they ended up getting up to about 192º and the skin was nice and crisp...

You will Love that thing once you get going....[IMG]
