As you make have seen my entry in the "See the World...Smell the Smoke" photo contest http://www.smokingmeatforums.com/for...3&postcount=67 was "catered" for the staff picnic at my sister's place of employment. The Chef of the Lodge (and I do mean Chef!!) made German Potato salad for the picnic. She told me her recipe (but not necessarily all the technique and procedures), so I took her info as a starting place and boldly went where no Meowey has gone before. Here is the resulting recipe.


Meowey's German Potato Salad

Ingredients:

5 lbs of potatoes cut to preferred size and cooked to preferred doneness
5 hard boiled eggs – sliced
5 slices of bacon – cut into ½ inch pieces
1 Cup chopped onions
1 Cup chopped dill pickles
3 TBL flour
3 TBL sugar
¼ Cup apple cider vinegar
4 good grinds black pepper
½ tsp salt
1 Cup water

Directions:

Brown bacon – remove from pan
Sweat onions in bacon drippings until soft
Sprinkle on the flour – whisk to make a roux – cook 1 minute
Add water – whisk to smooth out sauce
Add vinegar, sugar, salt, and pepper – stir and cook for 2 minutes
Add sauce to bowl containing potatoes, eggs, pickles
Stir to coat

Serve warm or chilled



It is middle of the road in vinegary tartness. If you want more "pucker factor", take out 1 TBL of the sugar and add more pickles. If you want it sweeter add 1 TBL more of sugar.

I have printed your recipe and will give it a try. But I must tell you that I am most impressed with your catering skills! I also enjoyed visiting the link to the resort. Brought back memories of my youth in Saranac Lake. Gods country! Just beautiful...

When I was very young my older brother was in the seminary up there and we visited him often. I have vivid memories of the color's of the Adirondack's in the fall.
It didn't last long though, turns out the Catholic Religion frowns on young men in the Seminary getting their girlfried's pregnant. That brought an end to my visits.
