Thanks to Dave and DiggingDogFarm. Just finished a trial batch of summer sausage using the suggested bactofirm F-CL and the recipe and process you guys directed me to. Total success on the tang and flavor. I did a Q-View on my adventure. Chewmeister, you might want to give this a shot...I think it beats Held's!
