These soup recipes are making me hungry!!

Here is my favorite corn chowder recipe.

Corn Chowder

6 slices of bacon
1 small yellow onion chopped
3 green onions, chopped (green part too)
2 celery stalks, chopped fine
2 TBs flour*
4 cups of milk
1 can cream style corn
2 cups of frozen corn (thawed) OR use fresh cut corn
2 cups cubed cooked potatoes (you can use canned)
salt and pepper to taste

Cook the bacon in a stock pot until crisp, remove from pan.
Cook onion and celery in bacon drippings until wilted.
Add flour stir and cook over low heat for two or three minutes.
Add milk, continue to stir and cook over low heat, Add the onion, celery, corn, cream of corn and cooked potatoes.
Chowder will thicken while heating on low.

Season to taste with salt and pepper.

Crumble bacon over top, or crumble bacon over individual servings.
Also looks nice with fresh chopped parsley sprinkled on top.

*For thicker chowder add three TBs of flour instead of 2.

Also, make with smoked tatoes and smoked corn for an extra level of flavor.
 
Yeah..interesting in similarities,there Cowgirl. Yanno, I've never done corn chowder. Bet the fam'll like it too. Thanks!

PS: I suppose I could cream my own corn...any recipes for this? Like you and the oven, I have a problem opening a can for any of my soups ;{)
 
Me too Rich, the best way to do it is smoke some corn on the cob, then scrape it, getting all of the milk. If you have the time, this works great in place of canned corn.
 
We have made a corn chowder similar to this, but ours has some ham and some cheddar cheese in it. We traditionally make it on Christmas Eve as well as other times.
