Chicken Thighs, Turkey Legs, Pork Short Ribs, ABTz W/QView

Everytime Ron posts those chicken thighs it makes me hungry for em. Went to the grocery and picked up a package. Put them in the TQ with some of the Yoshidas for about 2.5 hours. Wrapped them in bacon and then slammed another dose of Yoshidas on em.

Put together a mess of ABTz. I soaked these in milk for a couple of hours before smokin them and it does work to cool them down. I've been getting them too hot to eat and this put them right where I like em. Also picked up a package of pork short ribs. I've never seen them before and thought I'd throw them on the smoker too.

Also ran across a package of turkey legs and figured while I'm smokin I might as well fill the dang thang up. So.... doused with some poultry seasoning and in the smoker they went to. Here is everything all loaded up and ready to set the lid down.

Turkey legs turned out awesome. I may need to do a smoke with nothin but turkey legs in the smoker.

Chicken thighs turned out really good. The TQ took the flavor of the Yoshidas right down into the meat.

ABTz...... always good and very rarely make it to the final plate.

Those little pork short ribs were very tastee.... kinda like a mess of burnt ends but much juicier.

Honestly after I got all my stuff plated up I was so full from pickin that I didn't eat much. I've gotta quit doin that. Ok... maybe not. I enjoy the pickin more than the sittin down to eatin. This is my plate....

I have not used the TQ - actually have not found it in any of the local gorcers. Before I send off on the internet for it, how does it work? I noticed you put it on the thighs and then marinated but you don't mention on on the turkey or pork

I use TQ often making Buckboard Bacon, Canadian Bacon.... Corned Beef and Pastrami. It's usually left on the meat for a number of days according to the weight. Ron uses it a lot as a short cure with nice results. I hadn't tried it as a short cure on poultry until this smoke and it worked great. I have used it on pork chops and made a hammy breakfast chop out of regular pork chops. I didn't put any TQ on the turkey legs or the short ribs.

I'm with you, everytime Ron posts them I want to do a batch, went to bed last night dreaming of thighs with TQ wrapped in bacon.
Beautiful color on everything, crispy bacon on the ABTs and those turkey legs, I love turkey legs and those looked absolutely perfect!
Noticed on one leg you had a slice of bacon, did you just have an extra slice from the thighs or were you giving it a try, never tried wrapping the legs in bacon.

If you do a full turkey leg smoke sometime I highly suggest curing and rubbing like they are pastrami, did some a little while back that way and they were really tasty.
 
Now that ended up a full smoker there Dave. First you started out with some thighes and then you added some abt's and you just happen to find a few turkey legs. But the main thing is that it all came out looking and I know tasting good too.
 
Thanks pignit!That must be something like sweeter than sweet cure...We use to use it to cure bacon's at the butcher shop.I think the brand is Witts....something like that it's been awhile
 
DAVE!! Outstanding! Glad you finally tried those thighs.The one you cut open tells the whole story.

You did a fabulous job on everything. I have been wanting to do turkey legs also, just can't seem to find any at a decent price. I wonder what TQ would do to them?

I'll tell you what it does to them Ron, it makes them absolutely delicious. I love chicken but turkey is my main bird of choice and adding a bit of TQ to them just makes a delicious thing even better. Now all this talk about it, I'm going to throw a few cured ones on for my smoke on Wednesday!
 
Man! I got home from work over 2 hours ago, and I've been here ever since...I gotta eat now!!!!!!

Those pork shorties are just killin' me!!!! LOLOL!!!!!!!!!
