I've got a trimmed brisket and a couple of slabs of rib to smoke Sunday. My question is would it be alright to rub with my seasoning and wrap tonight to cook starting Saturday night with the brisket and ribs Sunday or should I freeze after seasoning. They were not frozen when I bought them so I did not really want to freeze them. Thanks

If you're talking about this Sunday, July 4th, I'm not sure why you'd want to freeze anything?  It wouldn't hurt to rub tonight and start it tomorrow, the ribs I'd just wait until tomorrow night to rub them down and wrap'em up for the fridge, not the freezer.
