can anyone help me out i am trying to smoke some beef and pork for a chili i am trying to figure out what kinda wood to use and also should i use wood chips or chunks?
What kind of smoker are you using? Generally speaking, for a longer smoke you'd want to try using chunks, chips would keep you refilling for hours at a time.
If you have a nice chip box, or an empty metal coffee can (with holes poked through it) chips are fine if that's all you can get. Othewise, throw some chunks in the chip box (or coffee can).
