Not sure if this should go in the poultry section, or wild game, but this is what's for dinner. My son brought home the breasts from about 16 ducks he and his buddies shot. This is a pretty easy, but tasty meal or snack for the game.

Take boneless breasts and sprinke with salt, pepper, and some fajita seasoning. Two ways to go from here, and we are doing both tonight. You can fry them in olive oil in a cast iron skillet, or throw em on the smoker. Take care that you don't overcook, as they will become dry. WIld duck is a lot like other wild game. Not much fat. We like wild duck beter than domestic because its not greasy like domestic duck tends to be.

When done (we like ours about medium to medium rare) stuff them in flour tortillas with some grilled onions, cheese, and a bit of guacamole.
