I have an offset smoker and this will be my first time using it. can anyone recommend some whole chicken recipes? I ordered maple wood chunks to put on top of the charcoal.
 
sometimes simpler is better, when I do chicken I usually just use some salt, pepper, some garlic, sometimes a little rosemary or oregano. would try and smoke it around 325- 375 to get your skin crispy. some people will brine the chicken for a few hours to keep it moist.

I always brine, or at least inject the breasts. Since chicken is basically two different kinds of meat, which are both cooked to different doneness. I cut my whole birds in half but not lengthwise. I make a cut across the pelvis and cook the white meat separately from the dark meat.

Brined chicken is great, it can turn a tough old bird into a tender feast.
Chicken is best cooked hot and fast rather than smoked IMHO.
My favorite is Jerked and cooked starting at 500 degree coals with temp decreasing over an hour and that's all it takes.

How long do you brine it? And is it just salt water? What ratio of salt and water? Thank you.
