i like to use my clay garlic roaster and follow steps like cut the top top of the whole clove or toe or the whole dang thing soak olive oil on it an put top on roaster and put in oven and when done just squeeze the paste out onto the meat and love the finished flavor.. i put em smoker also to roast and grill when slow cooking. https://www.amazon.com/s?k=garlic+roaster&ref=nb_sb_noss_1&tag=smokingmeatforums-20
Yum! I love roasted garlic! Some of the family is not that into it though. But now I'm thinking I'll make some to make a compound butter for a finishing sauce!
 
i do that for for garlic burgers to. they store so well in fridge.. i do em when ever i get a chance.. i but the bags of garlic

I love just SPOG and once you get a little slurry from the salt going I hit it with a fine dusting of espresso powder. I keep a bag of Bustelo espresso grind in my spice cupboard just for that. Adds a nice earthy dimension. No actual coffee taste

I did something similar last week. Used Montreal Steak seasoning (which is basically SPOG) ground up fine, and dusted with a little ground French roast. Short ribs got rave reviews from our friends.

The last few times I've done beef ribs, I've rubbed them with hot sauce before salt and pepper. Turns out good if you like a little heat in the background.

This sounds good. I try to stay away from the heat if the kids are gonna eat the same stuff we do. May have to give that a try on a chuckie first and see how we like it.

I'll take a look around this week and see what I can find. This time of year is horible trying to get anything. All the stores think smoking and grilling season ends after July 4th and its time to roll in the Halloween stuff lol!

Dude same here. I was at Home Depot over the weekend and they had Christmas trees out already. Grilling section dwindling down. Barely any bags of wood chunks. Couldn't even get a citronella candle. WTF!

Lol this is funny because when I grabbed these ribs at sams club they had Christmas stuff too. Drives me nuts man!
