I will be smoking two 14# apple brined turkeys in my MES 40”.I checked and I only have hickory and cherry pellets,but have apple and pecan chips. Which should I use?
The cherry pellets would be a good match. I would avoid the hickory personally. As for the chips, either one would work, but I would lean more toward the pecan. Your plan sounds similar to my T-day smoke except I am going to use a 50/50 mix of pecan and maple.
