Some of you may have read in another post that I picked up a half ribeye on sale at Kroger. So saturday I trimmed it a little, rubbed it with salt, pepper and garlic and put it on to smoke with the maze filled with hickory and cherry pellets. Decided to light both ends of the maze to increase the smoke output. Ran the smoker at 225 - 250. Took about 5.5 hours to get to 125 IT. Here it is after the smoke.

Wrapped in foil and let it sit for about an hour. OK, I did have a small taste, then put in the fridge. Sunday lunch I took it out and sliced into some nice sized steaks.

Got the grill screaming hot and threw the steaks on.

This was by far the best meat I've cooked. The outside was crusty and smokey and the inside was tender, tasty and incredibly juicy.
