Hi,

I have a Char-Griller Horizontal Rig with some mods. I am also new to smoking and I was wondering if the water pan that is used in the vertical smokers would work the same is I placed in the firebox of the Chargrilled. The firebox has two grates. I could place a grate in closer to the meat and place my water pan on there and manage my smoke on the other side of the firebox where there would be no grate.

Has anyone tried this?

When I had the Char-griller Duo w/side fire box, I didn't use any water pan. Also I placed my charcoal on the top grate and only lit one end(the end opposite the smoke chamber). If you put the water pan in the fire box you'll end up boiling the water out in no time flat. If you must use one put it in the smoke chamber near the side fire box.

I used to have a char broil cheapo horizontal and it will do better when i put two small loaf pans full of sand next to the firebox in the cook chamber. it would give you the heat shield that a water pan would except the water wouldn't boil out of it. i know some will say that gives a moist environment no it doesn't it helps your smoke get creosote. That's the black icky stuff you don't want on your food.

Happy Smoking,
