hi, my name is Arifin, from indonesia,, very interested in smoking since i know about american bbq , i only had one weber kettle last 2 years, it took time for me to learn smoking pork ribs.
now i am instereted in smoking brisket,and beef ribs, the cow originally from AUS(from small) then cattle here.

since i love american bbq, i did more searching untill i made my own UDS.
this is my own made UDS

i did spray the inside,

so now what i am needed an advice is for cooking TENDER brisket.

do i need to do snake method for smoking brisket with UDS?

the temperature for smoking brisket 225,250 or 275 f? because i have search so many differences between each other

when do i need to wrap?(only aluminium foil available)

what is the inside temp?

for beef ribs
what is the right temp for beef ribs?250 or 275?

when do i need to wrap?

and what is the inside temp for the ribs?
