Change the pace a little and did some quesodillas with deer steak. Seasoned the strips with olive oil and garlic salt a few hours before griddling. Onions, peppers and tossed in some leftover rice and beans from earlier in the week. Added some cheese and the rest Is history! Last one got some queso also ( pitmaster privilege)

This looks real good. Are those strips of backstrap?
Thanks! No, not exactly sure. Probably somewhere from the hind quarters. The packages were labeled "griddle" lol. Some of the larger cuts get labeled roast or griddle just for cooks like this.
