Venison Stew

Cooking up some stew for guy on river that gave it to me and another friend. Got everything prepped.

That was a chore so time for a break and a salty dog.

Used 3 lbs leg meat. Browned it up. Than browned some onions, celery and garlic. Put some tomato paste in to cook it a little. Into the pot. Used 2 cups wine and a cup of brisket juice mixed with a cup water. Planed on using dutch oven but got worried about meat being tough so went with pressure cooker. Did 30 min with 10 npr. Made up some roux with 1/2 cup of brisket juice I had and added it. I like my stew thick. Added veggies. Another 15 min and 10 npr.

Turned out good. Meat was tender.

Finished up with a shot of some cherry spirits. Not really crazy about this one. Reminds me of cough syrup. I in process of trying several flavors. So far peach, chocolate and hazelnut are favorites.

Just ate another bowl. Turned pretty decent. Made a couple people happy on the river today.

Looks great , I'm like you on the cherry flavor=medicine . My oldest and bestes induction burner died after about 10 year or so , it went in 5 degree sets and simmered perfectly, the newer 1 way to wide of a swing so have made very few stews recently. after seeing your pot full of goodness I am buying another 1. that's the only downfall of a gas range to me is the low temp
