Has anyone just ground venison with beef fat for a 80/20 ratio? I have pork butt but I wondered if I could just grind venison with beef fat and then mix up some ac legg #116 for snack sticks.
Depends a lot on what you like... I've found venison sausages with beef fat to be kind of dense, which might not be a bad thing in a snack stick. For general sausage, I prefer about 30% pork shoulder. Looking forward to seeing your results!
You could use venison mixed with pork butt. Depending on how well you trimmed the butt, the fat ratio will vary in the 70-80% range where the venison is usually 95% lean (or more for some). If you have beef fat, that will work also as would pork fat alone mixed with straight venison. A target final meat/fat ratio of 80%/20% is perfect for sticks and the AC LEGG #116 is a great mix.
I have talked to some fellow smokers who suggest I try running a batch of AC Legg #116 with just pork. I have not done this yet, but they say it works great. I need to try a 1 or 2 pound test batch.
