Time for Brisket

The house next door has been remodeled and the for sale sign went up last week. An open house was scheduled for Sunday which seemed like a good day to smoke brisket. Costco had prime brisket for $3.99/lb so bought one for me and one for my neighbors. One was 18 lbs and the other 15 lbs.

I got the smoker fired up. Trimmed both briskets up, used a mild hot sauce as a slather and then put on a dry rub of course ground pepper, granulated garlic, granulated onion, kosher salt and a little bit of smoked paprika, ground rosemary and ground bay leaf. Briskets in the smoker at 8:15AM. I used oak and apple wood at around 275. Folks came by to look at the house and any buyer will not be surprised by the smell of smoke and bbq. I know my smoker isn't on the seller's disclosures and I don't want any problems with the new neighbor. Pics below are before, 8 hours in and when I pulled the first one off at 9PM. Second one pulled at 11PM. Both wrapped, put in coolers. I was happy with the results and the neighbors already asked me to make them another one the next time I do a brisket. Sorry no pics of the sliced brisket.

Brisket looks fantastic. Your floating that smoke through the neighborhood will likely help sell that house! My neighbors were thrilled with the perks when they moved in.
